Pizzeria Roma has been a household name in Harlingen for over 44 years when it comes to traditional Italian food.

A class of its own
Pizzeria Roma makes its pizza dough entirely from scratch, using high-quality olive oil. “The base of a pizza is very important, but in the Netherlands it’s often not made properly. It should be thin, light and crispy. An Italian pizza also has a thin topping. It really is a craft in its own right.”

Pizzeria Roma has been a household name for over 35 years. It’s incredible when you think about how Stefano’s father started out in 1981. Stefano explains: “My father was a photographer at the time and had a thriving business. A cousin of ours came to the Netherlands from Italy and wanted to stay here. Somehow, my father then got the idea to start a pizzeria where my cousin Bernardo could work. Bernardo had no experience and on opening day he prepared the dough, but it was a complete disaster. A friend of my father’s, who also ran a pizzeria, helped out by bringing over some pizza dough. That meant the first customers were still able to get a pizza,” says Stefano with a laugh.

In the early 1980s, the Dutch were still largely unfamiliar with pizza. Stefano explains:
“The people of Harlingen were absolutely fascinated by this Italian dish. What’s more, the atmosphere in our restaurant was always brilliant. My father made sure of that. He was a true host, cracking jokes, and he really loved the hustle and bustle and the people. There was always a cosy, living-room atmosphere at Roma; it was basically a party all the time,” says Stefano. He remembers it well himself, even though as a little boy he would sometimes fall asleep under the tables.
Eight years ago, Stefano took over the day-to-day running of the restaurant completely, giving it his all. Since then, a few things have changed. Stefano explains: “I can’t replace my father. I’m not the host he was. I’m mainly in the kitchen. I also approach the market very differently. We live in a digital world. So I’m also busy with social media and reach many (potential) guests.” What, according to the entrepreneur, hasn’t changed? “That’s the quality; that’s always number one for me too.”
