Our team consists of a mix of young people, some of whom are students at the hotel school, passionate hospitality enthusiasts and seasoned professionals. They all welcome guests with a big smile!
Led by owners Hotze Bouma and Willem Schaafsma, we work incredibly hard every day to make it another culinary feast.
We’re all proud to work at this unique venue. Working in the oldest prison in the Netherlands is truly special! The variety – from serving an early lunch, to making people happy out on the terrace by the old canal, serving beautiful dishes and pairing them with the perfect wines, or throwing a party behind the bar until the early hours, keeps our staff enthusiastic and motivated – and we love to share that enthusiasm with our guests!
